This recipe is adapted from one of Tyler Florence’s recipes. I saw him make this dish on his Food 911 show YEARS ago. It’s so simple and quick. If you want the full Mediterranean taste, you can find his recipe (Mediterranean Pasta in Minutes) on www.Foodnetwork.com. His recipe calls for olives and artichoke hearts, but because I have picky eaters in the family, I’ve had to changed it up a little.
What you will need:
1 lb pasta (cooked according to directions on the box)
1 lb chicken breast (I use the chicken tenderloins)
6 oz feta cheese
1 cup sun dried tomatoes
1/4 cup heavy cream
Heat 2 tablespoons olive oil in a skillet over medium heat
Brown chicken – 3-4 min each side
Once chicken is cooked I usually chop it up in to bite size pieces
Return chicken to skillet and add sun-dried tomatoes and some garlic.
Saute for 2-3 minutes
Next add feta cheese and saute for 1-2 minutes
You can also add olives and/or artichoke hearts at this point
Saute for 1-2 minutes
By now you should have cooked pasta ready
Add chicken to pasta and toss
Serve (I add a little Parmesan cheese) and enjoy!
