If there’s something I can’t get enough of…..it’s chips and salsa. I’m all about short cuts, so when you don’t have time to make a labor intensive salsa (roasting the chiles, tomatoes, etc) this is a really simple recipe you can make in a matter of minutes. Once you make it a few times, you can start experimenting with different types of chile peppers. I normally use a can of mild green chiles.
1 – 14.5oz can of petite diced tomatoes
1/2 onion chopped
1 – 4oz can green chiles. Or you can dice up 2 fresh jalapeños
Fresh lime juice and minced garlic
Blend everything together and pour in to a bowl.
