Brown-Butter Apricots with Pound Cake & Ice Cream

Here is a  simple delicious dessert perfect for a hot summer evening. I’ve made this several times and it’s always a hit.

Here’s what you’ll need:

5-7 apricots

1/2 stick of butter

1/4 cup of brown sugar

Pound cake

Vanilla ice cream

Cut up the apricots

Melt butter over medium heat

Once butter is melted add the brown sugar and stir

When brown sugar is fully incorporated add the apricots and cook over medium heat for 4-5 minutes

Place a few slices of pound cake on a plate, add a scoop of ice cream on top

Finally, pour a few spoonfuls of the apricot mixture over the ice cream

It’s honestly that simple! You can also add some bourbon to the mixture while it’s cooking if you want to add a little something extra. Another option is just to pour it over the ice cream and not have the pound cake and vice versa, or pour on top of french toast if you want a good brunch option. However you serve this, you will be sure to love it!
