Celebrating with Mariachi Cobre

Better late than never! Here is the recap of Mariachi Cobre’s holiday party to celebrate the incoming New Year. Just like last year it was full of music, food and laughs. A few of the members were missing but as always, we are grateful for having each other throughout the year.

As usual the food was amazing. On the menu, tacos, shrimp, Posole, Charcuterie platter, Coxinhas, Tres Leches cake and much more.

For Posole Recipes you can check out the recipe I posted here a few years ago Easy Pork Posole

Or check out Mariach Cobre’s Joe Baca’s recipe in last year’s post Pork Posole

This year I ordered Coxinhas (Brazilian Chicken Bites). I became obsessed with these little bites of deliciousness when my daughter’s teacher had them at a party.

I have yet to make these at home, but you can bet I’ll definitely be trying a recipe.

Here is a Coxinhas recipe from Olivia’s Cuisine

Finally dessert is always something to look forward to, especially when it’s Tres Leches Cake.

One of my favorite recipes is from Honest and Tasty

Can’t wait until our next Holiday Party!

Reminder:  you can catch Mariachi Cobre at Walt Disney World EPCOT

A few years ago they began performing Fiesta de Navidad shows, so if you are here during the holidays make sure have your kids take part in this Fiesta.
